Recipe: Spicy Stir Fried Mock Duck and Greens

Spicy Stir Fried Mock Duck and Greens

From the CSA: broccoli, asparagus, green garlic, bok choi, and hon tsai tsai. Original recipe from our CSA, Harmony Valley Farms (and they sourced it from http://www.Epicurious.com). I mostly followed the recipe on this one, just left out peanuts (didn't have any), peanut oil (didn't have any), Asian sesame oil (didn't have any), swapped red pepper flakes for "dried chiles," and swapped mock duck for chicken. It was very tasty.


Spicy Stir Fried Mock Duck and Greens

2 Tbsp soy sauce
2 Tbsp dry sherry (or cooking sherry)
1 tsp olive oil
2 tsp brown sugar
1 can mock duck, contents chopped into bite-sized pieces
2 green garlic stalks
2 tsp. dried red pepper flakes
1 medium bunch baby bok choi
1 medium bunch hon tsai tsai
1 large head broccoli
1/2 bunch asparagus - about 2 c.

Whisk 1 Tbsp. soy sauce, 1 Tbsp. sherry, 1 tsp. olive oil, and 1 tsp. brown sugar in medium bowl. Add mock duck. Marinate about 20-30 minutes. Meanwhile, mince garlic and chop all the other vegetables into bite-sized pieces

Whisk another 1 Tbsp. soy sauce, 1 Tbsp sherry, 1 tsp. oil, and 1 tsp. brown sugar in small bowl and set aside.

Open a window and, if you've got one, put on a gas mask for this next part. Do not directly inhale the fumes from the pan or you will regret it. Heat about 2 Tbsp oil in skillet over high heat. Add garlic, pepper flakes, stir 30 seconds. Add mock duck and marinade, stir-fry another 3 minutes. Transfer mix to bowl.

Add a little more oil to the pan. Add rest of veggies one large handful at a time. Cook firm veggies first, then softer ones, and then greens. IMPORTANT: Stir until greens just begin to wilt before adding more. After adding the last handful, saute just until tender.

Add mock duck mix back to pan. Add set-aside soy sauce mixture. Stir until heated through, a couple of minutes.

Variations:
Most vegetables will work well in this--the wider the variety, the better it tastes.

2nd veggie combination:
broccoli (cook a little longer to soften)
Romanesco broccoli (see above)
edamame (boil for 5 minutes in salted water and then shell first)
baby bok choi
tomatoes (add last thing, just heat through--provide a really nice flavor/texture/color contrast)

If you're adding a very large amount of veggies, consider doubling the soy sauce, olive oil, sherry, pepper combo.

Chicken instead of mock duck/mock chicken is really good too.
