Eggplant Parmesan

For [livejournal.com profile] opheliac_9, since she asked. Original recipe from the More-with-Less Cookbook. I had to make a couple of substitutions - what the recipe called for is in parenthesis following.


Preheat oven to 375 degrees.
Cut in 1/3" slices:
* 1 medium eggplant
Cover with hot water and let stand 5 min.

Saute in butter: (recipe called for just adding these to saucepan with tomatoes etc.)
1/2 green pepper, minced
1/2 onion, minced
1 Tablespoon minced garlic

Add to saucepan:
* [1 can diced tomatoes, 1 can diced tomatoes with chilies] OR [2 cans diced tomatoes + 1 jalapeno (to taste)]
* 2 T. tomato paste

Simmer uncovered 20 minutes, stirring occasionally.

Meanwhile, dry eggplant slices and salt. Fry in 1/3 c. oil until lightly browned on both sides. Drain. Sprinkle with salt and pepper. Put in the bottom of 9 x 13" baking pan. Mix together and sprinkle over the eggplant:
* 1 1/2 c. [pulverized Italian seasoning croutons] OR [bread crumbs plus 1/2 Tbsp Italian seasoning]
* 1/2 c. Parmesan cheese
* 2 T. chopped parsley
* 1 t. salt
* 1/8 t. pepper
* 1 t. oregano

Spread tomato sauce on top of crumb mixture. Top with mixture of:
* 1/4 c. Parmesan
* 1-2 c. mozzarella
* 1/2 Tbsp Italian seasoning
* 2 Tbsp sundried tomatoes, minced

Bake 15 minutes.

Served with garlic bread and buttered spaghetti.

Get her the cookbooks! They're excellent, and since you guys are trying to eat less meat, they'll have a lot of good recipes in them.

They're both put out by a Mennonite press, but international relief/development/missionary circles are surprisingly small. Good ideas get around.
